Butlered hors d'ourves: Filet of Beef Medallions, Coconut Fried Shrimp, Bruschetta, and either Robed Angels or Mini Maryland-Style Crab Cakes

Drink Selections
We have to supply our own alcohol, so to cut costs, we have decided to serve beer, wine and two signature cocktails.
Beer: Yuengling Lager, Miller Lite and possibly one more
Wine: A cabernet and a pinot noir, a chardonnay and a riesling, and a blush
Signature cocktails: Undecided. I'll post ingredients once I find them.

Dinner Menu
We will serve a strawberry salad, which will be plated, to get all of the guests to their seats. The rest of the food will be served buffet-style.
Carving station: Prime Rib of Beef and Pork Tenderloin served with various rolls, specialty breads, and condiments including mustards, horseradish sauce, mayonnaise and apricot glaze
Steamed Vegetable Melange
Potato station: Mashed Potatoes topped with bacon or ham, various cheeses, mushrooms, red/green peppers, sour cream, chives or spring onions served in martini glasses

Wedding Cake
I love the classic look of an all-white cake. This is the picture we gave to our baker for inspiration. We are pretty much going to use this exact design, except our cake will have sugar gardenias instead of roses. To add some color, I purchased this beautiful aqua blue cake stand off Ebay.
The bottom layer of the cake will be lemon with raspberry filling. The middle layer; carrot with cream cheese filling. The top layer; red velvet with cream cheese filling. The icing for the entire cake will be white buttercream. (Yum!) This cake will serve 75 guests, and we will be getting a sheet cake from Costco to make sure that we have enough cake for everyone.
Cookie Table
There are two reasons we are having a cookie table at our wedding: First, I went to college in Pittsburgh, where it is tradition to have a cookie table in place of or in addition to the wedding cake, and I think this is a totally awesome tradition. Second, my grandmom on my mom's side is the only surviving grandparent that Ryan and I have between us, so I really wanted to do something special to include her in the wedding. She is second generation Italian, and she has recipes for the best Italian cookies anyone has ever tasted. She's so excited to contribute her recipes and amazing baking skills. I'm really excited too and I'm sure the cookies will be a big hit at the wedding. Here are some ideas for how I want the table to look...
